Our Father's Day Sticky Bacon Tortillas recipe

Featuring scrambled eggs, feta, tomato relish and hot sauce, all wrapped up in a warm tortilla, our Father's Day Sticky Bacon Brunch Tortillas are a real crowd-pleaser. Try the recipe for yourself!


Serves 4

6 flour tortillas

20ml sriracha hot sauce

100g feta cheese

40g fresh coriander

1 small red onion

2 small tomatoes

400g streaky bacon

2 garlic cloves

2 tbs olive oil

2 tsp red wine vinegar

1 tsp sugar


Preheat the oven to 200C. Line 2 oven trays with baking paper. Crush or finely chop the garlic cloves. Pick the coriander leaves and finely chop the stems, keeping them separate. Coarsely chop the onion and tomatoes. Crumble the feta. Combine the sriracha and 2 tsp water in a bowl.


Heat 1 tbs olive oil in a small saucepan over high heat. Cook the garlic, onion and coriander stems, stirring occasionally, for 3 mins or until the onion has softened. Season with salt and pepper. Add the tomato, 2 tsp red wine vinegar, 1 tsp sugar and 2 tbs water, then stir to combine.


Reduce the heat to low, cover and cook, stirring occasionally, for 8 mins or until the tomato has broken down slightly. Remove the pan from the heat. Meanwhile, put the bacon on the lined trays, drizzle with 2 tbs honey and roast for 12 mins or until golden and cooked though. Remove from the oven and cover with foil to keep warm.


Meanwhile, crack 4 eggs into a bowl. Add one-third of the feta and 1 tbs water, then whisk until well combined. Season with salt and pepper. Heat 2 tsp olive oil in a large frypan over high heat. Cook a quarter of the egg mixture, gently stirring, for 30 secs to 1 min until set on the bottom.


Top the egg mixture with 2 tortillas, overlapping slightly and pressing gently to stick to the egg. Using a spatula gently turn the tortilla over. Cook for a further 1 min or until egg is cooked through. Remove the tortilla from the pan and cover to keep warm. Repeat with the remaining egg mixture and tortillas. Divide the tortillas among plates, top with the bacon, the relish, coriander leaves, remaining feta and drizzle with sriracha. Enjoy!


Sriracha is a hot chilli sauce, so feel free to serve on the side for those like Dad who may enjoy a bit of heat with this brekkie. You can also keep your egg tortillas warm on an oven tray, covered with foil in an oven preheated to 100C.
